Garlic Mashed Potatoes & Chicken Gravy

Creamy and fluffy mashed potatoes smothered in a smooth and savory chicken gravy. The perfect side to serve with Southern Fried Chicken!

Garlic Mashed Potatoes
2lbs potatoes (4 large russet or Yukon gold)
1 head of garlic roasted
1 cup sour cream
3 tbsp butter
1/2 cup Parmesan
Salt to taste
Chives
Gravy:
1 qt chicken stock
1/2 cup butter
1/2 cup flour
1/3 cup heavy cream
Salt to taste
30 turns black Pepper
Mash Directions:
Preheat oven to 400dgr
Cut top of garlic head off to expose each clove then drizzle with olive oil and salt lightly before roasting for 25-30mins until top is browned and garlic is soft enough to squeeze out
Peel and chop potatoes and place in pot with cold salted water. Bring to a boil and simmer until fork tender about 15mins.
Mash and mince garlic with 1tsp olive oil into a paste.
When potatoes are tender, drain water well. With a potato masher, mash hot potatoes with garlic paste, parmesan and butter. Add sour cream and salt to taste, combine well until creamy with a rubber spatula.
Gravy Directions:
Melt butter over medium heat and gradually whisk in flour. Cook roux for 10-15 mins until it darkens to a light brown and begins to smell nutty and toasted.
Gradually whisk in chicken stock making sure to smooth out all lumps before each addition of stock. Lower heat and simmer.
Add cream and season.
Plate mashed potatoes and pour on gravy. Garnish with finely chopped chives. Enjoy!
